The JW Marriott Maldives Resort & Spa will host a unique culinary event from November 17 to 19, 2024, with Chef Kelvin Cheung from Jun’s Dubai. The event, spanning three days, offers guests an immersive culinary journey against the stunning backdrop of the Maldives.

Renowned for his innovative third-culture cuisine, Chef Kelvin blends flavors from different culinary traditions. He has received recognition in the Michelin Guide Dubai, MENA’s 50 Best Restaurants, Gault & Millau UAE, and the title of What’s On Dubai’s 2024 Chef of the Year. At Jun’s, he has revolutionized the dining experience in the Middle East with his dedication to innovation and taste.

Speaking about this event, Chef Kelvin said,

“Food has always been about connection for me, whether bridging flavors, cultures, or people. I’m excited to bring my perspective on food and wellness to JW Marriott Maldives Resort & Spa, where we’ll explore flavors while focusing on sustainability and mindful eating.”

Chef Kelvin will work with the luxury resort to design special dining experiences that highlight sustainability for this event. The menus will showcase locally sourced ingredients, such as fresh produce from the resort’s JW Garden. They will also use zero-waste cooking techniques to create healthy dishes that promote wellness and inclusivity.

The culinary adventure begins on November 17 with a five-course dinner at Kaashi, the resort’s treetop restaurant. Guests will enjoy breathtaking views of the Indian Ocean while savoring dishes that blend Indian, Thai, and Chinese influences. Signature dishes will include Pani Puri, Tom Yum, and Char Siu Wagyu Short Rib, celebrating Chef Kelvin’s diverse heritage.

On the second evening, diners will have another five-course menu at the resort’s over water restaurant, Hashi/Shio. Each dish tells a unique story of global fusion, highlighting Chef Kelvin’s creativity and culinary expertise.

The final day features an interactive zero-waste cooking class at Aailaa, the resort’s all-day dining venue. In this class, guests will learn to craft delicious dishes while minimizing food waste. The focus will be on using fresh herbs and ingredients from the JW Garden.
