Chef Igles Corelli: A Legacy of Culinary Innovation
Chef Igles, a household name in Italian gastronomy and a familiar face on Gambero Rosso TV, brings decades of experience and a passion for sustainable, high-impact cuisine. Back in the 1980s and 1990s, he gained international recognition as head chef of the legendary Il Trigabolo in Ferrara, where he earned two Michelin stars. Later on, he earned another star at La Locanda della Tamerice, and then continued to innovate as executive chef at Atman.
In addition, he pioneered Circular Cooking, a zero-waste culinary concept that he introduced on the Gambero Rosso Channel in 2012. This philosophy, which focuses on respecting every part of each ingredient and minimising waste, fits perfectly with Lily Beach’s commitment to mindful and sustainable dining.
