Furthermore, Chef Nyoman brings nearly 30 years of culinary experience to her new role. She has worked with some of the most prestigious hotel brands in the world, including Rosewood, Marriott, Shangri-La, and the Royal Palace of Jordan. Her extensive experience also includes notable positions at Montigo Resorts and Coco Boduhithi Maldives. Over the past decade, Chef Nyoman has played a vital role in Accor Hotels, contributing significantly at Sofitel Macau, Pullman Guangzhou, Pullman Maldives, and now, SO/ Maldives.

Moreover, Chef Nyoman’s roots trace back to Bali, Indonesia, where her love for food began in her childhood, inspired by her mother’s traditional cooking techniques. After formal training at the Hotel Academy in Indonesia, she launched her distinguished career, which has taken her across various countries and culinary traditions. Thus, her diverse background brings a global perspective to every dish she creates.
