Spices renowned for their healing properties such as cinnamon, clove, turmeric, ginger, cumin, ashwagandha, and more are used by the chef to prepare the dishes. The dinner experience by Chef Nitin is also carefully curated with chosen ingredients as the chef believes in the Spice Health Concept. This concept embraces the overall health benefits of each component utilized in the meal preparations.

Chef Nitin’s Culinary Expertise

Chef Nitin has an impressive tenure of three years with the Vilu Reef resort team. Here, the chef has continuously elevated the culinary experiences offered to guests. Throughout his journey, Chef Nitin has managed to set new standards of excellence at Sun Siyam Vilu Reef. His unique culinary approach is showcased through special Thali dinner experiences. Through these dishes, guests get to experience Nothern Indian cuisines, which combine authenticity and health.

Chef Nitin’s culinary landscape expands across Germany, France, the USA, Canada, Italy, Mexico, Jamaica, and now the Maldives and Thailand. In addition to the title of the 2nd Best Chef in the India Chapter at the Bocuse d’Or 2012 World Chef’s Championship, Chef Nitin also participated in workshops with luminaries like French 3 Michelin star Chef George Blanc.

Experience Culinary Artistry with Chef Kelvin at JW Marriott Maldives

The JW Marriott Maldives Resort & Spa will host a unique culinary event from November 17 to 19, 2024, with Chef Kelvin Cheung from Jun’s Dubai. The event, spanning three days, offers guests an immersive culinary journey against the stunning backdrop of the Maldives.

Renowned for his innovative third-culture cuisine, Chef Kelvin blends flavors from different culinary traditions. He has received recognition in the Michelin Guide Dubai, MENA’s 50 Best Restaurants, Gault & Millau UAE, and the title of What’s On Dubai’s 2024 Chef of the Year. At Jun’s, he has revolutionized the dining experience in the Middle East with his dedication to innovation and taste.

Speaking about this event, Chef Kelvin said,

“Food has always been about connection for me, whether bridging flavors, cultures, or people. I’m excited to bring my perspective on food and wellness to JW Marriott Maldives Resort & Spa, where we’ll explore flavors while focusing on sustainability and mindful eating.”

Chef Kelvin will work with the luxury resort to design special dining experiences that highlight sustainability for this event. The menus will showcase locally sourced ingredients, such as fresh produce from the resort’s JW Garden. They will also use zero-waste cooking techniques to create healthy dishes that promote wellness and inclusivity.

The culinary adventure begins on November 17 with a five-course dinner at Kaashi, the resort’s treetop restaurant. Guests will enjoy breathtaking views of the Indian Ocean while savoring dishes that blend Indian, Thai, and Chinese influences. Signature dishes will include Pani Puri, Tom Yum, and Char Siu Wagyu Short Rib, celebrating Chef Kelvin’s diverse heritage.

On the second evening, diners will have another five-course menu at the resort’s over water restaurant, Hashi/Shio. Each dish tells a unique story of global fusion, highlighting Chef Kelvin’s creativity and culinary expertise.

The final day features an interactive zero-waste cooking class at Aailaa, the resort’s all-day dining venue. In this class, guests will learn to craft delicious dishes while minimizing food waste. The focus will be on using fresh herbs and ingredients from the JW Garden.
