Le Méridien Maldives Resort & Spa appoints Muthuraman Subramanian, also known as Chef Muthu, as the new Executive Sous Chef. Bringing more than 17 years of experience in the luxury hospitality industry, Chef Muthu will elevate the resort’s culinary offerings with his innovative approach and expert leadership.

Chef Muthu has worked at prestigious hotels around the world. He has built a reputation as a culinary leader through key positions at renowned properties like Shangri-La Barr Al Jissah Muscat, NH Collection Oasis Doha, and JW Marriott Marquis City Centre Doha. These roles allowed him to gain valuable experience in leadership. Throughout his career, Chef Muthu has excelled in large-scale operations, from pre-openings to menu innovations.

A notable highlight of his career occurred at “Brasserie Quartier” at The St. Regis Dubai. There, Chef Muthu led the restaurant to earn the title of “Best French Restaurant” from BBC Good Food Middle East twice. He designed creative menus and managed diverse culinary teams, earning him global recognition.

Chef Muthu’s expertise extends beyond menu creation and team management. He has overseen high-volume dining, managing up to 2,200 daily covers while ensuring the highest standards of food safety and quality. As a certified HACCP Level 3 professional, he has honed his skills in kitchen operations, stock control, and staff development. These skills reinforce his comprehensive understanding of the culinary world.
